was how Alberto Antolini opened conference day two. Through an ethical discourse he discussed the topic by relating it to the SIMA takeover, which had been exhaustively covered the previous day by Stefano Mazzini and the other Ocrim experts. He did so by presenting - finally - the highly anticipated corporate video, 'Ocrim Team', which literally thrilled and captivated the audience. A 'young' and engaging video, with music and lyrics - combined with images dedicated both to the young people of the hired band and to the storage cells - that speak of the 'dream' come true and the newly achieved corporate goal.
Afterwards, the esteemed mayor of Cremona, Gianluca Galimberti, who is very close to the Ocrim family, greeted the audience and expressed words of friendship and admiration for the Antolini family and the Ocrim company, considered by the entire Cremona community to be a great business known throughout the world..
After the mayor's lively speech, Cremona 1 TV journalist Giovanni Palisto took the stage as moderator of the technical day dedicated to the world of alternative flours. A topic that has already been addressed during other Ocrim events and meetings and that requires continuous updates, since the world of flours is constantly evolving and diversifying, both from a bureaucratic/legislative point of view as well as of the product itself. Palisto then illustrated the specific topics and introduced the day's expert speakers: Marco Galli, director of Ocrim's technological department, who focused on the classification of flours according to Italian regulations, compared with foreign countries; Daniele Marani, deputy production manager at Molino sul Clitunno, who spoke about stone-ground flours and innovative and/or traditional choices; Simona Digiuni, head of Ocrim's Research & Technological Development department, who gave an overview of gluten-free flours; Elisa Menchetti, quality control manager at Pastificio Fabianelli, who spoke about legume flours, their nutritional properties, the market and alternative products; finally, Costanza Jucker, Associate Professor in Agricultural Entomology at the University of Milan, who discussed the complex topic of insect flour.
Following these talks, a very stimulating and lively debate took place, thanks to an interested audience, very knowledgeable and attentive speakers, but also thanks to the charisma of Giovanni Palisto.

At the end of the debate and after presenting the schedule of the upcoming webinars, an unexpected moment arrived. A moment anticipated and dear to Ocrim's chairman, Sergio Antolini. This is the presentation of the first OP-prize, an award that, starting this year, is presented to certain employees who have distinguished themselves for some noble or natural reasons, such as their commitment to their work, or their young age. Sergio Antolini presented the valuable prizes to the employees after a speech of high cultural profile, as is his natural inclination. He mentioned and quoted one of the most persecuted illuminati in history, Galileo Galilei, and did so by making a connection to the complex and arterial topic of Communication. Furthermore, Sergio Antolini stated that 'only those who are demanding with themselves develop the ability to judge what is worthwhile and what is not'. One can only agree with him!
It should be underlined how the OP-prize is created in the likeness of the puppet Pinocchio, an Italian literary and cultural icon, who teaches us that we must never stop wanting to learn and grow, even when we think we are already adults.
The conference ended with wishes from the Antolini family and an invitation to lunch at Augeo Art Space, an artistic and cultural space a few steps away from the Fulgor Theatre and thus in the heart of Rimini, where conference participants were able to enjoy lunch surrounded by great beauty and art.
In the afternoon, all guests were taken to Santarcangelo di Romagna for a guided tour. It is considered one of the most beautiful ancient villages in Italy and is a place where you can breathe in a wealth of culture and history. The participants - mainly foreigners - were thrilled by the sight of these places, but also by the interesting explanations given by the expert guides.
After learning, it is then time for leisure. At the end of the cultural walk, everyone gathered at the Tenuta la Lepre, a charming place with plenty of green space, where a dinner was held, made with typical local products. But the real surprise of the evening was the performance of the musical band, the JBees, which literally swept away all of the day's fatigue. Even the energy of the Ocrim team involved in organising the event was restored. Good clean fun with great music and wild dancing.
And, in all this, it didn't end there!
The following day - Sunday 24 September - some of the guests present at the 'Wheat, flour and...' event, together with some members of the Ocrim team, joined another cultural initiative and were engaged in a guided tour to discover the city of Urbino, known worldwide as one of the most important Italian Renaissance centres, a Unesco World Heritage site.
Dear friends of Ocrim, we hope that this 'Chronicle of an announced success' has brought back good memories to those who attended the 'Wheat, flour and...' event and has offered a tactile and plastic vision of what happened on 22, 23 and 24 September to those who were unable to attend.
